Stuffed Spaghetti Squash

Prep time 30 min ~ Total time 1 Hour

Preheat oven to 375

1 medium spaghetti squash ~ split and deseeded

5oz chicken breast ~ cut into 1 inch chunks

½ cup diced onion

½ cup diced zucchini

¼ cup diced bell pepper

¼ cup Conan's Ju Ju (I recommend Chipotle Mango)

2 Tablespoons cream cheese

2 Tablespoons preferred cooking oil

Fresh Cilantro for garnish

Place squash open side down on sheet pan with a small amount of water and roast for 30-45 minutes or until soft.

While roasting the squash in the oven, heat sauté pan with oil. Sear chicken and add veggies. Saute on high until nicely caramelized.

Deglaze with Conan's Ju Ju and finish with cream cheese.

Fill squash with chicken mix and bake for 15 minutes.

Garnish with chopped cilantro and enjoy!

Easy Crock Pot Pork Ju Ju Burritos 

Prep Time 10 min ~ Cook Time 6 hours

5 lbs pork sirloin roast 

1 bottle Conan's Island Ju Ju (we suggest Chipotle Mango but use your personal favorite Ju Ju!)

tortillas 

1 block queso fresco cheese crumbled 

tomatoes diced 

salsa 

sour cream 

And any other condiments that suit your fancy; chopped onion or cilantro, etc! 

Don’t forget extra Ju Ju!

Cut pork sirloin roast into 1 inch slabs place in crock pot and pour in your bottle of Island Ju Ju. Cover, set on low for 6 hours. Now, serve it up with all the fixins! 

We used Chipotle Mango and set it up before we left for the market! So easy! We made ours into Chimichangas and served condiments on the side. Delicious! You can even add scrambled eggs to this and/or diced and fried potatoes, wrap them and freeze them, then microwave them and fry them for easy premade breakfast burritos!

Ju Ju Marinated Top Round Steak 

Prep Time 5 min ~ Cook Time 15 min

1 thick cut top round steak 

8 oz Roasted Jalapeno Pineapple Island Juju

4 oz low sodium soy sauce

2 oz toasted sesame oil 

cracked black pepper 

cilantro leaves

ginger (optional) 

Place all ingredients into a shallow dish then place steak into dish. Be sure to turn the steak a couple of times during its marinating. You can marinate for as little as a few hours or up to 36 hours. Stab the raw steak with a meat fork while it marinates to allow those delicious flavors to soak in. Get your grill hot and make sure it is well seasoned. Place the steak on the grill and let those grill marks happen (grill marking is caramelizing the meat and that is what really brings out the flavor)! 5 min on each side or flip it more often for more grill marks! Let the meat rest for 10 minutes (depending on the size of the meat-the bigger the meat the more rest it needs)

This recipe works great with flank steak as well and also lends itself to being served with yaki soba!

Kasen’s Empanadas

Prep Time~Cook Time

Preheat oven to 400

 

For the dough:

3.5 cups flour

1 ½ sticks cold butter

2 eggs

½ ice cold water

1 ½ tbsp apple cider vinegar

Cut cold butter into little bits and mix into flour roughly (allow a little to be unmixed).

Add eggs, vinegar, water into flour and mix. Wrap and chill for at least 5 hours.

 

For the Filling

1 lb lean ground beef

½ lb chorizo

1 small yellow onion diced

2 cloves minced garlic

½ cup Chipotle Mango Ju Ju

2 tsp of taco seasoning

Pepper Jack cheese cut into small cubes 

 

Cook meat, onion, garlic, seasonings and sauce until browned. Roll out dough and use a bowl (or pint glass depending on your desired empanada size) to cut out crust, spoon in filling, cheese, and seal with your fingers or fork, apply egg wash and put on prepared baking sheet and cook in oven at 400 for 20-25 min

Easy Pork and Black Bean Casserole

Prep Time 25 min ~ Cook Time 30 min

Preheat oven to 350

1.5 lbs Pork cubed

1 Tbsp Coconut oil

1 can black beans drained and rinsed

1 can cream of chicken soup

I can diced tomatoes

2 cans diced green chilies

1 cup quick cook brown rice

½ cup Conan’s Ju Ju (we love Roasted Habanero Mango)

½ cup shredded cheddar

Sliced jalapeno

Brown pork in coconut oil. Combine all ingredients. Place in a 9x13 glass dish. Top with cheese and jalapeno slices. Bake at 350 for 30 min.

Huli Ju Ju Grilled Chicken

Prep Time 15 min ~ Cook Time 20-25 min

4 oz Mango Coulis

4 oz pineapple juice

2 oz tamari (or soy sauce)

2 oz brown sugar

2 oz sesame oil

½ oz minced ginger

½ oz minced garlic

½ oz Worchestershire

Mix together and marinate chicken for 4 hours or overnight. Grill skin side first on direct heat. 

Reduce glaze to coat back of spoon and brush chicken turning frequently until done which is about 15-25 min.

Oven Roasted Butternut Squash Hash

Prep time 15 min~Cook time 30 min(ish-check for goldenness)

1 butternut squash peeled and diced

1 cup whole cloves garlic

2 bell pepper one red one yellow 1" diced

1 large yellow onion 1" diced

Bacon~ you measure that with your heart!

â…“ cup brown sugar

1 tsp black pepper

½ tsp cumin

½ tsp smoked paprika

4 oz Conans Island Ju Ju (we suggest Chipotle Mango but like most of these recipes you’re able to use your favorite Ju Ju flavor)

Candied bacon: Lay out bacon on sheet pan and season with black pepper, cumin, and smoked paprika. Place in 350 degree oven for 10-15 minutes. Drain fat and cover with brown sugar. Return to oven and cook until sugar caramelizes, Cool, chop, and - set aside.

You have peeled and diced your butternut squash, now toss lightly with oil, salt & pepper and roast it in your oven on 450 degrees until golden. cool and set aside. 

Sauté onions, bell peppers, garlic, and fresh thyme till aromatic. Deglaze pan with Conan's Island Ju Ju. Fold in bacon & squash and enjoy!

Ju Ju Braised Short Ribs

Prep Time 10 min ~ Cook Time 2 hours

Preheat oven to 325

1 four boned rack of beef short ribs

½ cup whole garlic cloves

4 oz Conan’s Island Ju Ju (we love cooking with Chipotle Mango)

2 bottles of stout ale

pinch of salt

pinch of pepper

flour (enough to light coat ribs)

2 oz olive oil

Salt and pepper your short ribs then coat in a light dusting of flour. Heat olive oil in a skillet and sear short ribs on all sides. Place seared ribs into a roasting pan and add whole garlic cloves, Island Ju Ju, and the bottles of stout ale. 

Roast in the oven at 325 for 2 hours. Remove from the oven and let rest for 15 minutes before serving.

Turn it into a one pan meal by throwing in some baby red potatoes and some baby carrots! It's always cool to switch out your favorite Ju Ju sauce or your favorite dark ale to change it up a bit!
